How do you test a new dish before it goes on the menu?
Updated:
Short answer
Have 10 to 15 guests score the new dish at a tasting and read the result next to its cost: if it is loved and the margin holds, it goes on the menu. In Palato, guests sign in from a QR code and score each dish; every dish gets a result showing how many loved it and how far the taste drifted from your target.
Who to invite
- People like your target guests: regulars, or guests who have just found you
- Not your team: they know the dish too well to be neutral
How a tasting works in Palato
- 1Pick the dishes and the date; we set the tasting up with you.
- 2Guests scan the QR code, sign in and score each dish.
- 3Each dish's result: how many loved it, whether the taste drifted from your target, its cost and margin.
- 4Choose what goes on the menu; reprice the loved dish with a thin margin, fix the recipe of the less loved one.
